Kirsten from the city of Topeka Kansas sent our webmistress the following question. She asked how do I go about freezing carrot juice? Freezing fresh homemade carrot juice is a very simple task, in fact we have a great frozen carrot juice recipe hosted on our website. What you will need is a small sealable freezer proof container to store the juice in, and preferably one that will not allow the juice to incur any level of freezer burn. I do highly recommend that before freezing any fresh homemade carrot juice or any other juices for that matter, that you stir into it one or two heaping tablespoons of fresh squeezed lemon or lime juice. Fresh citrus juice will prevent any oxidization from occurring within the carrot juice during the freezing process. Depending on how well you freeze the juice, it can remain fresh in the freezer for months at a time. If however you don't use a proper freezer proof container, then the juice may start to get freezer burn after just days.
